Crusty Oven Potatoes

- 1/4 cup butter
- 1/3 cup chopped onion
- 1/4 cup chopped pepper
- 2 cans new potatoes (small red ones)
- salt/pepper
- pimiento (optional)
- 3/4 cup Pepperidge Farm dressing mix
- 1/4 cup melted butter
- Sauté onion and pepper in butter
- Combine stuffing mix and melted margarine and sprinkle on top
- Bake at 350º for 30 minutes
