Bunch's Chili

Ingredients

  • 1lb ground beef
  • 2 cups chopped onion
  • 1 chopped green pepper
  • 4-5 stalks chopped celery
  • 2 cans tomatoes (diced)
  • 2 cans kidney beans (I use one plus just the “juice” from the 2nd)
  • 1 TBS sugar
  • 3 TBS chili powder
  • 2 TBS vinegar
  • salt and pepper to taste

Directions

  1. Sautée onions, celery and pepper.
  2. Brown meat. Add other ingredients and simmer very slowly for one hour.
  3. Add tasty stuff on top - cheddar, sour cream, jalapeños, extra onion - tobasco, etc.

Side note: This recipe was published sometime prior to the 1920's (I want to say 1912) in a book entitled "Recipes of the Lower Cape Fear" (I believe) and it stands the test of time.
