Bunch's Chili

Ingredients
- 1lb ground beef
- 2 cups chopped onion
- 1 chopped green pepper
- 4-5 stalks chopped celery
- 2 cans tomatoes (diced)
- 2 cans kidney beans (I use one plus just the “juice” from the 2nd)
- 1 TBS sugar
- 3 TBS chili powder
- 2 TBS vinegar
- salt and pepper to taste
Directions
- Sautée onions, celery and pepper.
- Brown meat. Add other ingredients and simmer very slowly for one hour.
- Add tasty stuff on top - cheddar, sour cream, jalapeños, extra onion - tobasco, etc.
Side note: This recipe was published sometime prior to the 1920's (I want to say 1912) in a book entitled "Recipes of the Lower Cape Fear" (I believe) and it stands the test of time.
