Peanut Ice Cream Pie

Ingredients

  • 1 9" graham cracker crust
  • 1 quart vanilla ice cream (softened)
  • 1/2 cup light corn syrup
  • 1/3 cup creamy peanut butter
  • 2/3 cup chopped dry roasted salt-free peanuts

Directions

  1. Prepare crust - refrigerate until well chilled. Press ice cream into piecrust.
  2. In small bowl stir corn syrup and peanut butter until well blended. Pour half of mixture over ice cream.
  3. Sprinkle with half peanuts. Repeat layering.
  4. Freeze until firm. (about 5 hours)
  5. Let stand at room temp for 5 minutes for easy cutting.

Homemade crust: 2 cups graham cracker crumbs, 1/4 cup sugar and 1/3 cup butter. Press firmly into bottom and sides of 9" pie plate; making small rim.

 

(Note: I've never actually made this but my Mom does and people get all happy. I don't have a sweet-tooth for much more that an ungodly amout of a lot of Mountain Dew.)
