Fresh Spinach Salad

Ingredients
- 1/2 cup oil - vegetable or olive
- 1/4 cup vinegar
- 3 TBS lemon juice
- salt & pepper
- 6 slices bacon, cooked & crumbled
- 1 lb. fresh spinach, torn into bite-size pieces
- 2 hard-boiled eggs, chopped
- 2 green onions, sliced
Directions
- Combine first 7 ingredients in a jar. Cover tightly and shake vigorously, then refrigerate overnight.
- Add bacon, mixing well.
- Combine spinach, eggs and green onions in a serving bowl.
- Pour dressing over salad, tossing lightly.
- Yield 4-6 servings.
