Fresh Spinach Salad

Ingredients

  • 1/2 cup oil - vegetable or olive
  • 1/4 cup vinegar
  • 3 TBS lemon juice
  • salt & pepper
  • 6 slices bacon, cooked & crumbled
  • 1 lb. fresh spinach, torn into bite-size pieces
  • 2 hard-boiled eggs, chopped
  • 2 green onions, sliced

Directions

  1. Combine first 7 ingredients in a jar. Cover tightly and shake vigorously, then refrigerate overnight.
  2. Add bacon, mixing well.
  3. Combine spinach, eggs and green onions in a serving bowl.
  4. Pour dressing over salad, tossing lightly.
  5. Yield 4-6 servings.
