Fried Zucchini

Ingredients (Yield: 4-5 Servings)

  • A couple of zucchinis, sliced lenthwise
  • Extra Virgin Olive Oil
  • Onion Ring Coating Batter
  • 1000 Island Dressing, mixed with Tobasco to taste for dipping
  1. Heat oil in a skillet
  2. Follow instructions as if the zucchini were onion rings
  3. I screwed up and made the oil too hot, which meant the zucc's weren't cooked enough, etc.
  4. Next time I'll roll with a conservative, slow 4 on the stove in terms of the oil.
  5. Yep, deep fried is super-fat-ass and bad. But I missed the State Fair. As always.
