Nana's Sweet Potato Soufflé

  • 5-6 sweet potatoes, boiled and mashed well
  • 1/2 stick butter
  • 1/3 or 1/4 cup each of milk and OJ to bring to consistency
  • Cinnamon, nutmeg and brown sugar to taste
  • One egg
  • 1/2 cup chopped pecans/coconut (optional - yuck to both IMO)
  • Big, fat marshmellows
  1. Beat above ingredients well
  2. Butter casserole dish and add everything in
  3. Bake 30-40 minutes @ 350º
  4. Add marshmallows until slightly browned
