Cordon Cheddar

(Modified version of Chicken Cordon Bleu II - from allrecipes.com... submitted by Behr.) http://allrecipes.com/Recipe/Chicken-Cordon-Bleu-II

  • 3 skinless, boneless chicken breast halves
  • Cracker Barrel sharp cheddar, sliced from the block
  • 1 1/2 tablespoon and 1-1/2 teaspoons all-purpose flour
  • 1/2 teaspoon paprika
  • 3 tablespoons butter
  • 1/4 cup dry white wine
  • 1/2 teaspoon chicken bouillon granules
  • 1-1/2 teaspoons cornstarch
  • 1/2 cup heavy whipping cream
  1. Pound the chicken breasts until flattened
  2. Blend the paprika and flour, then coat the chicken with the mixture
  3. Brown the chicken in melted butter
  4. Add the wine and bouillon to the pan
  5. Reduce heat to low and allow to simmer for 30 minutes
  6. In a separate bowl, blend the cream and cornstarch
  7. Add cheddar to the top of the chicken and allow it to melt
  8. Remove chicken, add cream and cornstarch to the pan sause and slowly blend
  9. Pour sauce over chicken; serve warm
